[Finished][3/25 - 26] Rantei Bibian Collaboration Event

Koriyama-shi, Fukushima Japanese

The fifth generation of chefs in Tokyo and the current - fourth generation - proprietor of the restaurant collaborate to create a menu with a theme each time.
As many of you may know, the owner of Rantei, Isao Igarashi, is the fourth generation of the “Kamebachi” sushi restaurant that has been in operation for generations in the neighboring city of Sukagawa.
From a young age, he was forced to help his family make sushi, which he hated.
And restaurants and sushi, which I hated.
And yet, for some reason, I have recently found myself becoming more of a sushi lover than anyone else.

Now, I recall the teachings of my late predecessor (the third generation), such as the tips of shimemono and preparation of conger eel, and the words that come back to me on a moment's notice, and my childhood self strangely comes back to my mind.
I am reminded once again that I am, after all, the son of a sushi chef.

The fifth generation of chefs will be preparing dishes such as cherry sea bream, shellfish, and running wild vegetables.
