We are pleased to announce the opening of "Akasaka Himeno".
We would like to express our deepest gratitude to all of you for your support.
I have been working earnestly on yakitori under Yoshiteru Ikegawa, the master of Torishiki in Meguro, Tokyo.
At "Akasaka Himeno", we will continue to devote ourselves to the cooking techniques we learned from our master and to the spirit of hospitality we offer to our customers.
We use mainly chickens such as Fukushima Prefecture's Date Dori, Kochi Prefecture's Tosa Jiro,
and Miyazaki Prefecture's Tsuma Jidori, as well as carefully selected vegetables and seasonings that we have personally discovered by visiting various regions of Japan.
We use our own salt and soy sauce, as well as a special sauce passed down from our master, and grill each skewer to the perfect degree of doneness using Kishu-binchotan charcoal.
We hope that our customers in Japan and abroad will learn about Japan's yakitori culture and the fact that there are so many delicious ingredients available throughout Japan,
and that dining at our restaurant will be a memorable experience for them.
We look forward to serving you.
Chef Masahiro Himeno
