「Nihonbashi Kawaguchi」has now opened in Nihonbashi Honcho.
The chef behind the counter is Yudai Kawaguchi, who studied for 11 years at Sukiyabashi Jiro, a famous sushi restaurant in Ginza and worked as the Sushi Master's right-hand man.
The nigiri is prepared with a dedication to traditional Edomae techniques. Classic offerings like tuna and kohada is complemented by the shari, prepared with rice vinegar for that distinctive, refined sourness that sets it apart.
For appetizers, the restaurant offers a variety of dishes that celebrate the essence of Edo cuisine.
The restaurant also serves a curated selection of Japanese wines, Kanto sake, and uses carefully selected Tokyo ingredients such as sake, soy sauce, mirin, salt, and other seasonings.
Enjoy our Edomae Sushi to your heart's content, which is made with refined technique and distinctive Edo character.
